Finn Fan Fix

On my video on Saturday night, I mentioned that I’d made a big batch of homemade granola, using a yumm-o sounding recipe my mom sent.

And – I got requests to share, so… here ’tis!

This is a Vermont Country Store recipe – they sent it to my mom in an e-mail….

How does this relate to Finn?

Food.  Finn.  Hello?

We makin’ granola for us, Mom??

I love granola.

What’s granola, again??

It’s called Lumberjack Granola – I’ll give you the recipe as written and then my substitutes/changes. 🙂

Ingredients

8 cups old-fashioned rolled oats
1 cup hulled sunflower seeds
1 cup hulled pumpkin seeds
2 cups walnuts
1 cup maple syrup
1 cup golden raisins
2 cups almonds
1 cup canola or olive oil
1 cup dried cranberries
2 cups pecans
1 Tablespoon coarse sea salt
1 cup shredded coconut

Preparation

Preheat oven to 325 degrees

In a large stainless-steel bowl, combine the oats, sunflower and pumpkin seeds walnuts, almonds and pecans.  Stir with a large wooden spoon (or clean hands) to combine.

Transfer about 4 cups of the mixture to a food processor fitted with the steel blade and pulse to coarsely chop, but do not make the pieces too small.  (This is just to slightly reduce the size of chunks to bit-size and you can skip this step if you prefer really chunky granola.)  Transfer the chopped oat mixture to a second large stainless-steel bowl.  Repeats until you have coarsely chopped the whole batch – again, not too fine.

Toss the oat mixture with the salt.  Pour the maple syrup and the oil over the top and stir with a wooden spoon or clean hands to completely combine the liquids with the oat mixture.  It will look just slightly moist.

Spread the granola evenly over the two shallow roasting pans or rimmed baking sheets in a single layer, about 1″ deep.  You may need to do this in two batches.  Bake, stirring every 15 min or so to keep the granola from burning and turning the pans to bake evenly.  Toast to a golden brown, about 45 minutes.  Remove from the pan and transfer back to one of the large bowls.

Toss will still warm with the raisins, cranberries and coconut. Let cool before packing into large mason jars to keep up to 2 months.

My changes

  1. I didn’t use the dried cranberries – they’re not our fave so…substituted dried dates.  About 10 ounces worth.
  2. Used canola oil – and only about 1/2 cup.
  3. Didn’t use walnuts – really don’t care for them.  So used extra pecans.  I couldn’t really tell you how many pecans I used.  At least 2 cups – plus…however many looked about right.
  4. Used slivered almonds cuz that’s what I had in the freezer.
  5. Didn’t use sunflower seeds.  No reason why – just didn’t have them and didn’t buy any more.
  6. My pumpkin seeds were roasted and salted.  Worked great.
  7. Do NOT skip the COARSE Sea Salt.  I had fine sea salt on hand, but bought some coarse for this.  That little tiny crunch of salt is perfect!!
  8. Try to use real maple syrup.  Try not to lick the syrup off the bottle.  Or…be sure no one is watching if you do!

Get ready to love this granola. And – if you’re of a mind – it would be awesome in trail mix form – add m&m’s or chocolate chips when the mix is….almost completely cool.  We didn’t do that.  Wanted to – but…we’re using as cereal, so…

We can add the chips into our cereal bowl on the down-low!

Enjoy!

  1. Such a great kit! And the granola sounds pretty yummy!! I’ll be right down to get mine…and I’m guessing that I’ll look a little like Finn standing there 6 feet away to get it. 😉

    • stampsnlingers

LOL! Just wear your hazmat suit – we’ll be fine! And it IS good. REALLY good, actually! Come on!

      Thanks, Amy

  2. Debbie Lindauer

    I really love magenta madness.

  3. Susan Mack

Magenta madness and misty moonlight – how to choose? How about both colors are winners!

    • stampsnlingers

It’s a great group of colors, for sure! Thanks, Susan! 🙂

  4. Robbie Miller

I can’t wait to try the granola recipe and I will definitely add chocolate chips (or M&M’s or both) to mine … chocolate for breakfast … ABSOLUTELY !!!!
Hugs and thanks for the recipe !
    Robbie

    • stampsnlingers

Not gonna lie – I WANT to put chocolate chips in it SO bad!! Go for it, kiddo!! Thanks 🙂

  5. Love Vermont Country Store! Of course, you are not buying their Granola, but you can buy their Maple Syrup to make your own! (You should have put a link for their catalog). I make my own granola, but will have to try this one.
Fav new in color has to be the Misty Moonlight, and I am not a blue person. Hard to choose between that and the Cider, though all are great. Glad to be rid of the old ones….too bright for me. Just tellin’ ya my fave, I know I am not eligible to win PP.
Does Finn actually eat Granola? That’s weird, but then, he is more people than dog in some respects.

    • stampsnlingers

Finn will eat anything that’s in a bowl. On a plate, in a cup, on the ground…. You’re right – I should have out the link – and now I have! 🙂 I love Misty Moonlight, too! Thanks, Julie!

  6. Kevin Boyer

My favorite new in color is just jade. I am excited to see and craft with all the new colors. Thanks for the chance to win.

    • stampsnlingers

I like that one, too! Thanks, Kevin – good luck! 🙂

  7. Diane Lindsay

Oooh thanks for recipe. Cant wait to try. And my favorite new in color is Cinnamon Cider. Yum . Have a great day.

    • stampsnlingers

Yep – I love that one, too. I also love cinnamon apple cider. Coincidence?!? 😉 Thanks!

  8. Lila

All the colors catch my eye but I have to say the Misty Moonlight is my favorite.

  9. Sue Floyd

    Hi Mary!
I loved this kit…so much that I hope to win:) Anyway, I liked the sentiment panel about family so much I decided to make it my mother’s day/fathers day card to my siblings….thing is I’m the o!rest of 8 so I need more supplies.
The stamp set is fabulous & I haven’t even christened the tree stamp yet! I’m so excited about the next PP tho.
Now, that granola recipe is so yummy looking, & I may make that today.
You are such a great friend to all your viewers. Thanks for being you!
    Sue Floyd

    • stampsnlingers

Thanks very much for your kind words, Sue – I appreciate them! Enjoy the granola – and good luck in the draw! 🙂

  10. Susan K

Oh, great. I’ve added the ingredients for the granola to my grocery list. Thanks for sharing. (I may have to halve or quarater the recipe!)
I’m liking the Magenta Madness–a softer looking Melon Mambo–because I think it’ll be the grandgirls’ favorite! I like them all though and am happy with the softness of them, though I’ll miss the boldness of the retiring colors.

    • stampsnlingers

It makes a LOT – but – I put 3 1/2 cups in a quart mason jar and vacuum sealed about 5 more packages. Yeah!! The new Magenta IS pretty! 🙂

  11. Carol C.

My favorite new colors are Magenta Madness and Misty Moonlight. Love those names.
How do they keep coming up with new names? Your granola recipe sounds like it’s worth getting up in the morning for! Love your blog, your dog stories, your sense of humor. How about showing us your above ground garden’s progress? thanks for all you share! You inspire me!

  12. Jennifer S

Magenta Madness! Always a fan of magenta!

  13. Linda Droege

Thank you for passing on the granola recipe and your suggestions. My grandkids love making their snack foods with me so when we are able to get together again, I know this will be a fun and delicious activity to do. It’s different from the granola we make so it will be a fun change.

Right now I am loving Misty Moonlight–I don’t know: is it just the name??–but I am definitely a blue girl. Thanks for the generous chance at blog candy. Another delicious treat!!

    • stampsnlingers

I love the name – and the color!! Have fun granola making when you’re able to get together again! 🙂

  14. Val P

Really loving the bumble bee but next the magenta madness! Thanks for the chance to win😊

  15. Angie Latham

Looks like a really great Paper Pumpkin kit! I just know I’m going to love all the new colors, but if I have to pick just one, I guess I’ll go with Just Jade.

  16. Ter

I love the Just Jade colour, so pretty! The colours remind me of chalk colours, they have a muted appearance.

    • stampsnlingers

They do! I am loving Jade, Moonlight and Cider the best so far!

  17. Glenda Lehrmann

I like the new In colors especially Cinnamon Cider! So pretty! Thank you Mary for this opportunity!

    • stampsnlingers

I know – they’re all great – but I really love Cinnamon Cider!! Good luck!

  18. Karen Andrews

Hi Mary. I’ve never made granola, but i do love trail mix. I may give this a try.
Im torn between bumble bee and magenta madness.
SO I’m thinking there might be some bee sets/dsp to go along with that color.

    • stampsnlingers

It’s pretty hard to not just sit and eat it by the handful!! Enjoy!

  19. Cindy O

I love, love ,love all the new In Colors, but my fav is Misty Moonlight! Can’t wait to start stamping with them. Thanks for sharing!

    • stampsnlingers

It’s going to be one of my faves, too, I can tell! Thanks!

  20. Barbara Dalessio

I love the MISTY MOONLIGHT – New In Color- It is a very soothing color

  21. Robin D

I was so hoping for some bright shiny colors but alas it is not so. I do like the Bumble Bee yellow though, I can never get enough yellow (Sunshine). So excited to get the new catalog.

    • stampsnlingers

Yes – Bumble Bee is so pretty! Thanks, Robin! 🙂

  22. Kristine Sowards

    I love the Magenta Madness!

  23. Arlene Lacy

The granola looks yummy. I’ll have to try making some. The Paper Pumpkin makes my heart pitter patter. I probably have more leaves and trees stamps than any other. They are so universal – any occasion and men or women cards. They are my go-to.

    • stampsnlingers

Do try the granola – it’s really good! And if you like trees – you’ll love this PP kit! Good luck in the draw! 🙂

  24. Tricia D

I love Misty Moonlight the most but I’m actually excited about all of the colors! I think they will fit in great with the remaining In Colors!

    • stampsnlingers

It’s a great set of In Colors, for sure. And yes – Misty Moonlight is leading the way for me!! 🙂

  25. Lou Ellen Combs

    Magenta Madness is yummy!

    • stampsnlingers

It’s pretty, for sure! Thanks, Lou Ellen! 🙂

  26. Linda Williams

    The granola sounds great!

    • stampsnlingers

It is!! Definitely give it a try! 🙂

  27. Paula Poindexter

Ahhhh sweet Finn loves what ever you are having. It is the dogs way! Your granola sounds wonderful! And your changes sound good too! I’m in love with the entire new set of colors but if I must choose just one then I go with Bumble Bee… I Love Yellow! It reminds me of the SUN!!!

    • stampsnlingers

The granola is really good – hope you’ll give it a go! And yep – Bumble Bee is definitely a heavy crowd favorite! Thanks very much, Paula!

  28. Karen L

I think “Just Jade” might be an interesting color to work with………a little jazzy but bright & calming in a strange way!

    • stampsnlingers

Yes – it’s a great green!! Good luck in the draw!! 🙂
